Apple, Pomegranate, Pistachio & Goat's Cheese Salad

Sharing a delicious salad I made the other week featuring pomegranates from my parent’s garden.
It’s a riff off the iconic Waldorf salad, where I’ve mixed some fruits and nuts together in a salad but instead of apple, celery and walnuts, I’ve gone for apple, pomegranates and pistachios.
It’s a fun and easy one that you can serve as a side salad or have for on its own for lunch with maybe the addition of some poached/grilled chicken for some protein.

Ingredients

  • The seeds of half a pomegranate
  • 1small head of lettuce
  • 1 handful of pistachio nuts, roughly chopped
  • 1 red apple, finely sliced skin on
  • 1 red onion finely sliced
  • 1 tablespoon of olive oil
  • 1 tablespoon of maple syrup
  • 2 teaspoons of balsamic vinegar
  • 1 teaspoon of mustard, Dijon or seeded
  • 2 squares of Meredith's goats feta, crumbled


Method

  1. Arrange the lettuce leaves onto a large platter.
  2. Layer the apple, red onion and pomegranates on top.
  3. For the dressing, place the olive oil, balsamic vinegar, maple syrup, mustard and some salt and pepper into a jar. Close the lid and shake until the dressing is combined.
  4. Spoon the dressing over the salad.
  5. Crumble over the goats cheese and sprinkle over your pistachios.
  6. Serve immediately.
