- 1 bunch of fresh basil
- 1 cup (250ml) of olive oil
Method
- Wash and pick your basil leaves, discarding the stalks.
- Boil a pot of water and once boiling, place your basil leaves in and blanch for 2 minutes.
- Strain into a colander and place the leaves into a bowl of ice water to prevent the leaves from cooking further.
- Once cool, strain the leaves and squish into a ball, removing as much water as possible. Cover the ball with a paper towel and squeeze to remove any remaining water.
- Place basil into a food processor with the olive oil and blend until smooth.
- Transfer to a container and place into the fridge overnight for the flavours to infuse.
- Strain the oil with a cheesecloth/coffee filter lined sieve to separate the basil leaf bits from the oil.
- Place the oil into a jar or squeeze bottle to drizzle on whatever you wish.
