Basil Oil

Makes- 1 cup of basil oil

Method

  1. Wash and pick your basil leaves, discarding the stalks.
  2. Boil a pot of water and once boiling, place your basil leaves in and blanch for 2 minutes.
  3. Strain into a colander and place the leaves into a bowl of ice water to prevent the leaves from cooking further.
  4. Once cool, strain the leaves and squish into a ball, removing as much water as possible. Cover the ball with a paper towel and squeeze to remove any remaining water.
  5. Place basil into a food processor with the olive oil and blend until smooth.
  6. Transfer to a container and place into the fridge overnight for the flavours to infuse.
  7. Strain the oil with a cheesecloth/coffee filter lined sieve to separate the basil leaf bits from the oil.
  8. Place the oil into a jar or squeeze bottle to drizzle on whatever you wish.
