Cheese Ball

My Cheese ball recipe is as you guess it a giant ball of different cheeses, flavoured and combined with your choice of spices, nuts, pickles, herbs and meats using a stand mixer. It’s super quick to whip up and can be made in advance and placed in the fridge or eaten immediately. Best served with bread, crackers or cut vegetables to dip into.

Ingredients

  • 250g Cream Cheese
  • 1 cup of your choice of shredded cheese (Mexican Cheese, Cheddar Cheese)
  • 2 tablespoons of Greek Yoghurt or Sour Cream
  • 1 stalk of spring onions, finely chopped
  • 2 tablespoons of your choice of pickles (Olives, Gherkins, Jalapenos)
  • 1/3 cup of your choice of nuts (Cashews, Walnuts)
  • 1 tablespoon of Chilli Oil
  • 2 tablespoons of sesame seeds
  • 2 pieces of short cut bacon
  • 2 tablespoons of your choice of spices (mustard powder, onion salt, garlic salt and smoked paprika)
  • Salt & pepper to taste

Method

  1. Dice your bacon into small squares and fry in the pan on medium until crispy and golden
  2. Finely chop your pickles, spring onion and nuts. In a small bowl, mix together all of your spices.
  3. Place your cream cheese, shredded cheese, Greek yoghurt/sour cream into your stand mixer and using the flat beater attachment, mix to combine.
  4. Next, add in half of the bacon, spring onions, sesame seeds, pickles, spices and nuts and mix to combine. You need to reserve the other half to be able to coat the cheese ball later on.
  5. For a bit of a kick, add in a tablespoon of homemade chilli oil, and mix to combine.
  6. Remove from the stand mixer and shape into a ball using your hands.
  7. Combine the remaining bacon, spring onion, sesame seeds, pickles, spices and nuts into a bowl, and cover your cheese ball until fully coated.
  8. Place on a plate, and serve with bread, crackers and a delicious drink of choice!
