Corn Tortillas

I've always wanted to learn how to make tortillas from scratch and it turns out, it's so easy! All you need is three ingredients: Masa Harina, salt and warm water. 
Masa Harina is a dried and powdered flour made of corn and treated with lime. You simply add warm water and a bit of salt and you can instantly work it into a dough for anything from tortillas to tamales.  Unlike other breads and pasta, you can work the dough straight away. It doesn't need any resting time to soften and relax.

  • 2 cups of Masa Harina
  • 1.5-2 Cups of warm water (approximate depending on the flour you use, always read packet instructions.)
  • Generous pinch of salt

Method

  1. Add the salt flour into a bowl with 1.5 cups of water. Mix to combine with your hands and slowly add more water if the dough feels too dry. I found it easier to use my hands to bring it all together into a dough. It should feel like wet sand but still dough like, it will take roughly 3 minutes to get to that consistency.
  2. Then using some scales to weigh, roll the dough into 60g balls and place into a tray.
  3. To make the tortillas, you  ideally need a tortilla press to be able to press the tortillas down into an even round flat shape. However, I have seen other people use the flat surface of a large pan and chopping board to create a similar pressing effect.
  4. Grab a snap lock sandwich bag and cut out two squares of plastic to line the top and bottom of the press and prevent the tortillas from sticking. 
  5. Place the ball of dough into the centre and press down firmly. Lift press and peel back the top plastic sheet to reveal the raw tortilla.
  6. Heat a cast iron skillet or pan and place down your tortilla. Cook on both sides until it starts to puff up and get a few char marks.
  7. As your cooking your tortillas, use a tea towel and tortilla warmer to keep them warm and fluffy.
