Whipped Ricotta Toasts with Basil Oil

  1. In a mixer, beat the ricotta, salt and lemon zest.
  2. Slowly pour in the oil a few spoons at a time and beat for a few minutes until light and fluffy.
  3. If you’re making my pea salad, reserve half a cup of the mixture for the salad.
  4. Transfer the remaining mixture into a piping bag. If you don’t have one, a zip lock bag with a corner snipped off is a good substitute.
  5. Toast your bread in a toaster until golden.
  6. Pipe the whipped ricotta onto your toasts. (If entertaining, I prepare everything in advance and do this 15 minutes before your party starts).
  7. Drizzle a bit of basil oil to garnish.
  8. Serve immediately.
