Whipped Ricotta Toasts with Basil Oil

Ingredients
- 1 baguette, cut into 8 slices
- 1 tub (375g) of smooth ricotta
- ¼ cup (62.5ml) of olive oil
- Zest of 1 lemon
- 2 teaspoons of salt
- 2 tablespoons of basil oil
Method
- In a mixer, beat the ricotta, salt and lemon zest.
- Slowly pour in the oil a few spoons at a time and beat for a few minutes until light and fluffy.
- If you’re making my pea salad, reserve half a cup of the mixture for the salad.
- Transfer the remaining mixture into a piping bag. If you don’t have one, a zip lock bag with a corner snipped off is a good substitute.
- Toast your bread in a toaster until golden.
- Pipe the whipped ricotta onto your toasts. (If entertaining, I prepare everything in advance and do this 15 minutes before your party starts).
- Drizzle a bit of basil oil to garnish.
- Serve immediately.
